Harvest time, a look back

Now that the holidays are basically over, I have a little time to catch up posting again. I'm letting my camera remind me of the topics I planned to cover on this blog. One down-side to this is that I am probably forgetting some funny stories (that I don't have any pictures to go with)--my apologies.

This past spring I had a number of posts regarding the trials I was having with my garden, specifically about the critters that were hampering all of my efforts. After a number of additional security measures, I finally was able to keep most of the culprits at bay. Here are some of the items I was able to eat for myself:

Green tomatoes (for frying), zucchini, and green beans.


Green bell peppers, more tomatoes--including grape and Roma (I let most of these ripen), green onions, and cucumbers (okay, I didn't really eat these--too small and pre-nibbled)

Carrots.


Vine-ripened tomatoes and an almost-red bell pepper.


Not pictured, but enjoyed: yellow bell peppers and cilantro.

THE PROBLEM with gardening is that most of your vegetables need to be harvested at the same time in the fall, especially when a frost is forecasted for an evening. As I am but one person, and can only eat so many tomatoes or carrots before they start to go bad, I ended up freezing a lot of the excess. My friend, Jenn, also dried some of the Roma tomatoes for me with her food dehydrator. THE BENEFIT of freezing is that you can make soup in January with tomatoes and carrots that you grew in your garden months previously.
